Hey there! How are you? I am hanging in there, staying busy and productive for the most part. In this crazy and uncertain time due to the virus right now, maintaining routines and focusing on my top 3 things is helping.
Here’s what we have been cooking…
Pizza Quesadillas - flour tortillas, pepperoni, mozzarella and butter. A panini press is nice to have but not essential. Just butter the outside of the tortillas, stick 1-4 pepperonis inside, sprinkle some cheese, put the other tortilla on top and let the cheese get melty and tortillas get golden crisp and you are done!
Crockpot Chili - the most you have to do is saute the ground beef, onions and garlic (minced or crushed in a bottle baby) and then add in all the spices/beans into a crock pot and wait for 4 hours, done!
The Perfect French Omelet - This way of cooking eggs is so yummy, love Bon Appetit!
Spaghetti and meat sauce - ground beef, marinara sauce, onion, garlic and angel hair pasta. Saute the meat, onion and garlic until brown. Drain the beef. Add in the sauce and let it simmer on low for 20 minutes. Prepare the pasta by following the directions and serve the pasta with spaghetti sauce on top, done!
Hot Dog Grilled Cheese - This has been a hit with the fam, so easy. You don’t have to have a panini press at all but the fam says I can only make them this way now. I’m okay with that.
Roasted Buffalo Cauliflower - just plain delicious!
Garlic Parmesan Noodles - I use angel hair….always. This was a new find and the kids gave it a big two thumbs up!
Grilled Cheese Sandwiches on Whole Wheat Bread with Roasted Red Pepper and Tomato Soup

Are you feeling fried, exhausted and just overall tired? We have been watching the following artist livestreams on YouTube, Facebook or Instagram. This has been an absolute JOY and has helped to add moments where we are not thinking about everything going on outside. Making our art practices more of a consistent priority in our day to day is amazing. And it usually incorporates some sort of exercise so we can warm up beforehand.

No Stress Chess - I have always wanted to learn how to play chess and now was a perfect opportunity. Our daughters are 7 years old and 5 years and we all picked up on the game pretty quickly. Hubs already knows how to play but he approves too. :P
Cupcake Latch Hook Kit - I bought two kits because I thought both kiddos would love it. Our oldest is working on her kit but the youngest pretty much delegated the activity to me. LOL! She will mark the design chart progress though, that is her contribution while she tumbles all over the place and just does other things in the same room as us. We don’t mind at all and we work on the activity while listening to The Adventures of Finn Caspian podcast.
